Porridge And Congee From Mr Lees

It’s getting to that point in the year when the weather is a lot cooler and we are swapping out salads, for soups and slow cooked recipes. I love making up a good porridge in the morning but, there are times when I just don’t have the time and I still want something warming for breakfast or lunch. That’s where the latest releases from Mr Lees come in!

Mr Lee’s brought us gourmet noodles that are gluten free, low in fat and contain no artificial flavours. The company was founded by Mr Damien Lee, who discovered he had cancer in 2o14 and ate a strictly raw food diet but craved his favourite cup noodles throughout his treatment. He decided to create a selection of gourmet cup noodles that were as quick to make as his favourite, but are low in sugar, fat and do not contain gluten. The ingredients are freeze dried rather than dehydrated, meaning they keep more flavour and nutrients than they would if they were dehydrated. The result is a flavoursome quick snack, that are really handy to keep in the cupboard for the days when you really don’t want to cook.

The porridges are made with gluten free oats, coconut milk and fruit, meaning they are also vegan friendly. There are currently three varieties, So Very Berry, Salted Caramel and Original. They are all good on their own, but I particularly like to top them with more fruit and nuts for a little added crunch. The addition of fruit helps to dial down the sweetness of the Salted Caramel but the So Very Berry is less sweet thanks to the addition of freeze dried goji berry.

Congee is a savoury rice pudding. The traditional Asian dish includes a blend of corn semolina, rice and gluten free oats, which is available in Original or Chicken. The latter is my favourite and it has a warming richness, that is so perfect for this cool weather. The Original, like the porridges, is a great base to be paired with other meat or to stir vegetables through.
