
As much as I love a good baking session I am pretty rubbish when it comes to anything inventive in the kitchen. Now I am all moved into my new house and have a large kitchen to potter in I thought it was about time I turned my hand to something a bit more interesting. Supplied with some cheese from Seriously Strong and some butter from President, it seemed the perfect opportunity. It turns out I can make a mean macaroni cheese and it is so easy, if only I’d known this before!

Ingredients – Serves 4
250g Macaroni, uncooked
1/4 cup of President Unsalted Butter, softened
1/4 cup of Flour
2 and 1/2 cups of full fat Milk
2 cups of Seriously Strong Extra Mature Cheddar
1/2 teaspoon of Salt
1/2 teaspoon of Pepper
4 rashers Bacon
1 pack of Ready Salted Crisps, crushed
Method
Cook the macaroni according the packet instructions.
In a large saucepan melt the butter, stir in the flour and add the milk slowly until the mixture thickens. Once the mixture starts to bubble add the cheese and stir until it melts.
Cook the bacon in a frying pan until crispy and crumble into the cheese mix. Stir this and the macaroni until coated in the sauce. Season with the salt and pepper then stir.
Preheat the oven to 180 degrees.
Tip the macaroni cheese into a baking dish, top with the crushed crisps and bake for 10 minutes or until bubbling and browned on top.
Tip into a bowl and enjoy.
There are so many variations that could be added to this dish. I’m going to flake some salmon in next time instead of the bacon! The Seriously Strong cheddar makes this a really cheesy dish so a topping of cheese isn’t needed, a bonus.
