
I know Bonfire Night has passed, but this weekend is still a time to celebrate all things bonfire and that means fires, toasted marshmallows, sparklers and sausages. Heck have upped the sausage stakes this year with their puntastic take on the bonfire banger, say hello to Heck Guy Porks.
Guy Porks, get it? I know, I am easily pleased but with lockdown can you blame me? They are really generously sized with a filling of pork and apple, then a touch of black treacle for a little smokiness. What more could you need for early November? As good as they are on their own with some mash, I popped some into a smoky casserole so thought I would share the recipe. I used a spice mix from Mr Wolf Spices called Pierre’s Erld Smokey which you can buy from the Mr Wolf Spices website. They have some lovely Christmas gift sets for sale at the moment as well if you fancy trying some more of their blends. You can still make this without the spice mix though and I have given you an option to replace it. Trust me though, it is better with the Erld Smokey!
Ingredients – Serves 2
6 Heck Guy Porks Sausages
1 Onion – Sliced thinly
3 Carrots – Chopped
1 Sweet Potato – Chopped into chunks
1/2 Butternut Squash – Chopped into chunks
Handful of Kale
1 Carton of Passata
1 Beef Stock Cube
2 Teaspoons of Mr Wolf Spices Erld Smokey
If you are not using the Mr Wolf Spices mix, add 1 teaspoon of smoked paprika, 1/2 teaspoon of chilli powder, 1/2 teaspoon garlic powder and 1 teaspoon of mixed herbs.
Method
Add a little oil to a frying pan and brown the sausages and onions, until the onions are soft.
Transfer to a slow cooker and add all the other ingredients. Season well.
Cook on low for 8 hours and serve.
If you don’t want to use a slow cooker, you can also transfer to a large casserole dish and cook in the oven at 160 degrees for around an hour.

The slow cooker casserole epitomises winter comfort food and is on my weekly rotation of dishes to cook at the moment. When Heck no longer sell Guy Porks sausages, I am sure it will be just as good with the regular ones. I’ll give it a go, just to make sure.
